Mochi? Daifuku too, buddy.

I’ve been a sushi fan for a few years now, but just yesterday at my local sushi restaurant I was introduced to the bulbous, curious, frozen happiness of mochi ice cream, or yukimi daifuku. Mochi is glutinous rice pounded into a thin, chewy pastry. Obviously, the first thing you’d want to do with it is wrap it around a little ball of green tea-flavored ice cream. That’s what I’d do. Oddly enough, that’s how you make mochi ice cream. You can find it in various flavors, including green tea, coffee, strawberry, lemon, ube, double sesame and plain old vanilla.
